This simple southern dish is loaded with high quality protein and omega-3 fatty acids. Serve as a sandwich or over a bed of greens for a quick, nutrient dense meal!
Ingredients:
- 2 1/2 cups organic or pastured chicken, cooked and shredded
- 3 pastured eggs, boiled and chopped (where to buy eggs)
- 1/2 cup diced celery
- 3 to 4 tablespoons finely chopped red onion
- 1/4 to 1/2 cup mayonnaise (preferably homemade), or more to taste
- 2 teaspoons lemon juice
- 2 to 3 teaspoons sweet dill relish, or to taste
- salt and pepper to taste (where to buy sea salt)
Method:
Combine chicken with eggs, celery, onion, 1/4 cup mayonnaise, lemon juice, pepper, relish, salt and pepper. Add more mayonnaise, as needed.

This is how just I make my chicken salad, too, and I add sliced grapes and finely chopped apples, plus some almonds or pecans and a good drizzle of honey in the summer. We love it! Try it with some curry plus honey sometime, too, for extra interest. Yummy!

I am usually not a fan of chicken salad but my husband loves it so I am going to make it and see if I like it and I am sure my husband will inhale it as well
Oh, if only I could find a sweet relish without high fructose syrup or sugar. Do you know of one? I love sweet relish in salads like these as well as brats.
