In my pantry there are fifteen boxes of non-GMO cornstarch. Okay, maybe not fifteen, but a lot. Ironically, I don’t even use cornstarch anymore (I use arrowroot powder), so they are probably going to sit there for a long, long time. One of the main reasons I started Meal Plan Mondays is because every time I headed to the store without a list I ended up buying a bunch of stuff I already had and nothing I actually needed.
I started with short lists, which Daniel was very grateful for. He has gone to work sans deodorant more times than either of us would like to admit thanks to my lack of organization. We make our own deodorant now that works better than store brands, but that’s beside the point.
When I moved to full meal plans life in our house really changed. I still can’t remember what I’m making on any given day (I have to check my own blog for that), but having the list to refer to means it almost always gets done. Gone are the days when Daniel got nothing more than a helpless expression when he asked “What’s for dinner?” Long live Meal Plan Mondays! At least in our house.
Spaghetti from Scratch – This was on the menu last week but I didn’t actually get around to making it. Remember I said it almost always gets done ; – ) Long simmered spaghetti sauce with rustic, soaked handkerchief noodles
Seared Salmon – Served with lemon/garlic butter sauce
Brown Rice and Avocado Stuffed Nori Wraps (fresh wasabi available behind the deli counter at whole foods)
Mixed Green Salad
Rosemary and Mint Lamb Stir Fry – We’re using this recipe but substituting wild rice for couscous. The mint will be supplied by our garden. Yum!
