Meal Plan Monday

It has finally dawned on me that in roughly twenty weeks I am going to have a newborn and cooking will not be a priority for awhile. It’s not exactly time to nest yet, but I am beginning to compile a list of quick, easy, nutritious meals that I can throw together during those first few months. If you’re short on time check out this weeks Egg Drop Soup recipe, created by Kristen M, an old friend of mine from college. We met in the philosophy department and never talked about food and now we both blog about it. Weird, huh?

Monday

Homemade Egg Rolls with Sweet & Sour Dipping Sauce – Recipe here. Yes we made this last week. It was so good we’re doubling the recipe!

*Note: If you don’t have beef tallow to fry in, make sure to use an oil that can withstand heat in excess of 350 degrees without oxidizing, such as grapeseed or almond oil. It makes the meal more expensive to prepare but is worth it (at least to me) to get healthy fats and avoid carcinogenic oxidized oils.

Tuesday

Olive, Apricot & Pistachio Couscous - Because couscous is a type of wheat pasta and quinoa is a whole grain with lots of protein, we’re changing the couscous to quinoa and cooking in chicken broth. Additional protein for this pregnant momma will be added with some diced chicken. Thank you Stephanie for posting this, it sounds delicious! Recipe here.

Wednesday

Kitchen CLOSED!!! – Out exploring a new restaurant that serves local, organic or grass-fed ingredients.

Sunday

Sea Scallops Sauteed in Butter
