When I got home from Whole Foods yesterday there was a realtor parked across from my house, waiting for me. She wanted to check it out before she called her client, so I let her in. As we were walking through the door Katie said “We have a showing?”
Yes sweetheart, we have a showing. Katie has learned well what this phrase means. It means that as soon as I sit her down for a snack she will be whisked right back up and put into the car with something more portable and less appetizing. It means she will be awakened early from her nap or rushed out the front door without going potty first.
It also means sometimes dinner doesn’t quite go as planned. This week of reversed schedules and unexpected difficulties reminded me of what it’s like to have a newborn. And since I will have one in just a few short months, it’s time to start making yummy, nourishing meals with LESS FUSS.
Leftovers from Monday’s meal (a large whole chicken) will serve as the base for both Tuesday and Wednesday’s meal. Thursday’s crock pot meal means I can come and go as showings require and still sit down to a delicious, aromatic dinner with my family sans fuss. We are mixing it up on Friday, replacing easy sandwiches for something just as delicious and quick. You get the idea.
